Trebbiano Giallo
A Lazio white grown around the Castelli Romani and at Montefiascone, where it is the main grape of Est! Est!! Est!!!. It gives a soft, low acid wine with a faintly floral note, fuller than Trebbiano Toscano and not much sharper.
Worth knowing
Est! Est!! Est!!! takes its name from a story about a bishop's servant sent ahead to mark good inns with the word est, and marking the one at Montefiascone three times. The wine has been trading on that story for four centuries.
