The DOCG was created to give Bardolino a serious tier, with lower yields, higher alcohol and a year of aging, but most growers still bottle their best fruit as plain Bardolino DOC because the market wants it light. When you do find a Superiore it tastes like a slightly deeper Bardolino: sour cherry, cranberry, white pepper, a little more grip and a longer finish, still nowhere near Valpolicella in weight. Think of it as a mountain-lake Corvina with a bit more concentration. Serve cool.
