Colli Bolognesi Pignoletto DOCG
Pignoletto is Bologna's house white, made from Grechetto Gentile grown on the clay and limestone hills south of the city. Most of it is frizzante: pale straw, green apple, white flowers, a faint almond bitterness, and crisp acidity that cuts through mortadella and tortellini in brodo. The DOCG covers the hillside classico zone and includes still and spumante versions, which show more texture and a chalky mineral finish. It's a wine for drinking young and cold, and it's cheap.
