Nebbiolo from the zones around, but not inside, Barolo and Barbaresco, especially the sandy Roero side of the river and the Langhe villages beyond the DOCGs. Unlike Langhe Nebbiolo it must be 100 percent nebbiolo, so it's the purer test: cherry, raspberry, rose, licorice and a tarry edge, with tannin that's usually softer and rounder than Barolo because of the sand. Single-vineyard versions from Bruno Giacosa, Pio Cesare and Prunotto can drink like junior Barbaresco. A year of aging is required.
