Recioto di Gambellara DOCG
Gambellara is Soave's neighbor across the provincial line, on the same black volcanic soils, and this is its dried-grape sweet white. Garganega bunches hang in lofts until January or later, then ferment slowly to a golden, honeyed wine with dried apricot, chamomile, almond and a smoky, mineral edge from the basalt. It's less rich than Recioto di Soave on average and often finishes a little drier and more bitter. A sparkling version exists and is mostly sold locally.
