Malvasia di Sardegna

A Sardinian white grown around Bosa on the west coast and near Cagliari in the south. The serious version is aged in part filled barrels under a film of yeast, which gives a dry, nutty, oxidative wine with real intensity. Sweeter versions exist and the dry one is the interesting one.

Worth knowing

The flor yeast film that forms on it in Bosa is the same mechanism that makes fino sherry, arrived at independently on an island a long way from Jerez. There are only a handful of producers left doing it properly.
