Vernaccia di Oristano

A Sardinian white from the Tirso valley near Oristano, aged for years in part filled chestnut or oak casks under a film of yeast. The result is dry, nutty, intense and deliberately oxidative, closer to a dry sherry or a vin jaune than to anything else in Italy.

Worth knowing

The flor yeast that makes it grows without being added and without the wine being fortified, which is very unusual. The style survives with a few producers and a great deal of patience, since the casks sit for a minimum of two years and often far longer.
