WhiteLead grape in 1
Vespaiola
A white from Breganze in the Veneto, giving a dry wine with citrus and a herbal edge, and more importantly the sweet Torcolato, made from bunches twisted onto a string and hung through the winter. The dried version has apricot, honey and enough acid to stay bright.
Worth knowing
The name is from vespe, wasps, which are drawn to the sugar in the ripe grapes. Torcolato is named for the twisting of the bunches onto the cord they hang from, so both the grape and its best wine are named after their own handling.
