A small central Salento DOC that has never caught on with producers, most of whom sell as Salento IGT. When you find one, the rosso is a typical Negroamaro: ruby with dried cherry, black plum, oregano and a bitter cocoa finish, medium tannin, moderate acidity, best drunk within a few years. The rosato is coral and savory. Cantina Fiorentino is essentially the only estate promoting the name.
