Permitted almost everywhere in Italy and rarely the point of the wine. Its real job here is sparkling: it is the backbone of Franciacorta, Trento and Alta Langa, where the high acid of a cool site and a long spell on the lees do the work. As a still wine it is at its best in Alto Adige and on the hills of Friuli, and at its least interesting in the warm middle of the country.

Worth knowing

Italy uses it as a component rather than a headline. In the appellation rules it usually appears as a permitted minority partner in a white blend, quietly adding body to a local variety that has the aroma and lacks the weight.
