Lambrusco di Sorbara DOC
The palest and most delicate Lambrusco, from a grape with a flowering defect that yields loose, low-tannin bunches on sandy river soils. The wine is bright pink to light ruby, with wild strawberry, violet, pink grapefruit and searing acidity; the best are bone dry, refermented in bottle or made metodo classico. It drinks like a savory sparkling rosé and it's the Lambrusco sommeliers reach for. Serve cold with salumi, fried gnocco or anything fatty.
