Sizzano DOC

A one-village nebbiolo DOC between Ghemme and Fara, famous in the 1800s (Cavour reputedly compared it to Burgundy) and now down to a few producers. Nebbiolo makes up 50 to 70 percent with vespolina and uva rara; the wine is medium-bodied, savory and high in acid, with dried cherry, rosehip, pepper, forest floor and a mineral, faintly bitter finish. Three years of aging are required. Cantina Bianchi has been making it for over a century and Comero is the modern reference.
