Vin Santo di Carmignano DOC

The Vin Santo of the small Carmignano zone, and in practice the Vin Santo of Capezzana, whose Riserva is one of Italy's most admired dessert wines. Trebbiano and Malvasia dried until winter, five or more years in caratelli, and the result is deep amber with dried apricot, walnut, honey, toffee and a saline, almost sherried finish; very sweet but with acidity that keeps it lifted. Artimino and a few others make smaller amounts.
