WhiteLead grape in 1
Erbaluce
A Piedmontese white from the Canavese, north of Turin, grown on moraine left by an Alpine glacier. Very high acid, with green apple, citrus and a stony finish. It is made three ways in the same zone: still, sparkling by the traditional method, and dried into the sweet Caluso Passito.
Worth knowing
That three way split is unusual for one grape in one small appellation, and the acid is what makes it work. The passito needs the acid to carry the sugar, the sparkling needs it for the base wine, and the still version lives on it.
