White
Ribolla Gialla
A Friulian white of the Collio and Rosazzo, on the Slovenian border, with high acid, citrus and a lean, stony character. Made conventionally it is fresh and precise. Made with long skin contact, which is where it made its reputation, it turns amber, tannic and completely different.
Worth knowing
It became the flag of the orange wine movement in the 1990s and early 2000s, when a few Collio and Oslavia producers went back to fermenting whites on their skins in buried amphorae. The technique is old and its revival here is recent.
