Recioto di Soave DOCG
Garganega dried on racks or hanging in lofts for four to six months, then fermented slowly and often aged in oak, yields a deep gold sweet wine at 12 to 14 percent with 100 grams or more of residual sugar. The best have dried apricot, honey, orange marmalade, saffron and toasted almond, with the volcanic soils giving a smoky mineral line and enough acid to keep it lively. Pieropan's Le Colombare and Gini's Renobilis are the wines that earned the DOCG. Serve with blue cheese or almond cake, or on its own.
