Terre di Casole DOC
A one-commune DOC pushed through by a handful of estates in the Elsa valley that wanted their own name rather than Chianti Colli Senesi. Sangiovese-led reds with cherry, dried herbs, tobacco and firm acidity, sometimes rounded out with Cabernet or Merlot; the whites and the sweet Passito are rarities. Total production is tiny and the wines are sold at the cellar door and in Sienese restaurants.
