Cabernet Sauvignon

Also called Cabernet.

The outsider that changed Italian wine. It was planted in Tuscany long before the rules allowed it, and the wines that resulted had to be sold as table wine because the appellation system had no room for them. It thrives on the coast, above all in Bolgheri, where the maritime climate keeps it from going jammy and gives it cassis, graphite and a cedar note with age.

Worth knowing

Sassicaia started as a private wine for one family's table, made from cuttings planted in the 1940s at Tenuta San Guido. It was sold as vino da tavola for decades, and eventually got a DOC of its own, the only single estate DOC in Italy.
