Asolo Prosecco DOCG

The smaller of the two Prosecco DOCGs, on hills across the Piave from Valdobbiadene, and the only Prosecco denomination that allows an 'extra brut' category. The wines are typically drier and a bit leaner than Conegliano Valdobbiadene, with green apple, white flowers, a chalky note and a bitter almond finish. Several small growers here make col fondo (bottle refermented, unfiltered) versions, which are the most interesting thing in Prosecco right now. Expect proper sparkling wine rather than a party fizz.
