The Karst is a windswept limestone plateau with pockets of red iron-rich soil where vines fight for survival in the bora wind. Vitovska is the white: lean, saline, with green apple, herbs and chalk, and in the hands of Vodopivec, Zidarich and Kante it gets long skin maceration and amphora or stone-vat aging, yielding amber wines with dried citrus, walnut and firm tannin. Terrano is the red: violet-purple, sharply acidic, with raspberry, iron and a rasping finish, low in alcohol and made for the local prosciutto. This is one of Italy's most distinctive terroirs.
