Conegliano Valdobbiadene Prosecco DOCG
The historic heart of Prosecco, on hills so steep they're hand-harvested, and a UNESCO site since 2019. Tank-method sparkling with white peach, green pear, acacia and a soft, foamy mousse, drier and more mineral than the DOC plains wine. The 43 'Rive' single-village bottlings and Cartizze, a 108 hectare amphitheater above Valdobbiadene, are the top tier; Cartizze is usually made dry (off-dry in the old sense) and shows riper stone fruit. Drink young, in the year after release.
