Grechetto
Umbria's white, and the component that gives Orvieto whatever grip it has. Thicker skinned than most Italian whites, which means real texture and a bitter almond finish, with pear and a faint herbal note. It resists rot well enough to hang late. On its own around Todi it makes a wine with body and enough structure to handle wood.
Worth knowing
Two different vines go by the name. Grechetto di Todi, sometimes called G5, is the one with the texture. Grechetto Gentile, the one grown in Emilia, is genetically Pignoletto and makes a lighter wine. The rules of several appellations do not distinguish between them.
