Castiglione in Teverina, Lazio
Trebotti sits in the tufa hills of Tuscia near Castiglione in Teverina, where Lazio meets Umbria and Tuscany. Three Botti siblings started the estate in 2003, and the name joins "tre" and "Botti." Ludovico Maria Botti, an agronomist like his grandfather, farms the vines and makes the wine. The estate has been certified organic since 2006 and belongs to FIVI, the federation of independent growers who do everything themselves from vineyard to bottle.
The soils come from the Bolsena volcano, and you taste it in the wines. Ludovico grows the local grapes, Grechetto, Violone (the local name for Montepulciano), Sangiovese and Aleatico. His 3S wines are made with no added sulfites, and some of the whites age in chestnut, a wood Italian cellars relied on until the early 1900s.
When I visited in 2026, a 2007 Incanthus Grechetto showed me how long these whites can last. It had moved into mushroom, sage and lemon confit and still had years ahead of it. Gocce, the estate's Violone cru, is the red to look for.
