White
Pinot Bianco
A white grown across northern Italy, at its best in Alto Adige and the hills of Friuli, where it gives apple, almond and a chalky texture over firm acid. It is quieter than Pinot Grigio and usually better made, and it is also a significant component of Franciacorta and other traditional method sparkling.
Worth knowing
It is a mutation of Pinot Grigio, which is itself a mutation of Pinot Nero, so all three are the same vine wearing different skins. Vineyards planted before anyone was checking carefully often contain a mixture of the three.
